Mike Parent & Phil Evans are the combined driving force behind Rudy’s. Mike opened Rudy’s over a year ago and is a familiar face in Apex and a fixture in the pub; he continues to manage staff and charm guests, while Phil oversees and runs the kitchen and menu.
Phil has been a chef since graduating with a degree in Culinary Arts from Paul Smith’s College, New York. His 14 years of experience have taken him to France, country clubs and luxury 5-star/5-diamond properties in Houston and Aspen as Executive Chef, working with acclaimed industry chefs such as Todd English, David Burke and Wolfgang Puck. Four years ago, he opened The Umstead Hotel & Spa in Cary, where Herons Restaurant gained instant local & national recognition.
In his new venture as owner of Rudy’s Pub & Grill, he is excited to be on the leading edge of a world-wide trend where high-end chefs go back-to-basics with simple, honest, home-style food in a casual, comfortable environment. On his menu you will find traditional pub selections with his own individual twist & flair, along with dishes that are unique to our location, all designed and cooked completely from scratch on-site in his kitchen.
